The olive harvest is also about to end for this year. Aroldo Bio 2020 EVO oil promises to be of truly excellent quality, while the quantity will be slightly lower than last year. The characteristics of the new oil.

Extra virgin olive oil has some really precious characteristics. First of all, it contains many polyphenols and vitamins. Its taste: intense and unique. Its organoleptic profile tends to lose intensity over time, while its nutritional and beneficial characteristics for our body remain unchanged for at least 18 months. Obviously this happens if you take care to store it correctly in cool, dry and unlit places, as well as in containers that do not filter the light.

But why is new vintage oil so popular? Its properties are indisputable and recognized worldwide, so much so that it occupies a place of primary importance in the Mediterranean diet because it is considered the main source of lipids. Let's discover its features:

- The aroma of the new oil is intense and its taste is enveloping.

- The acidity indicates the presence of oleic acid in the oil. In new vintage and quality extra virgin olive oil, cold extracted from selected olives, this value must not exceed 0.8%, our year at the moment stands at an excellent 0.18% More the percentage of acidity is the higher the quality of the extra virgin olive oil is.

- The itch? An advantage. New vintage extra virgin olive oil tingles because it has a high content of polyphenols which have antioxidant and anti-inflammatory properties - and of tocopherols - with a provitamin, antioxidant and immuno-modulating action, especially in the elderly.

- Bitter is also a virtue. It is given by phenolic compounds which, in addition to giving the oil a high nutritional value, ensure a long conservation over time. Phenolic compounds are antioxidants, in fact they also protect the oil from the oxidation process, avoiding rancidity. Of course, the bitterness of extra virgin olive oil also depends a lot on the type of olive from which it is extracted.

If you like new, more bitter and spicy oil, you should know that you have to buy it between the end of November and the beginning of December. This is the new oil that will win you over with its wealth of absolutely unique aromas, flavors and organoleptic properties.
